Comfort Food

Hey Reader,

Sometimes we just need a little comfort food, am I right?

Usually comfort food tends to refer to things like big bowls of pasta, creamy mac & cheese, and thick slices of cake.

But what if your comfort food could actually be something healthy?

It’s absolutely possible! 🙌

I LOVE to eat well and one of my favorite things to do is re-creating my favorite foods in a healthier version.

I created this recipe for Creamy Cauliflower Gratin, using the delicious French potato dish “Gratin Dauphinois” as my inspiration.

This dish is creamy, comforting, and full of flavor! Perfect for the winter months and - really anytime you need a bit of delicious comfort.

And the best part is - you’re actually eating something healthy while you enjoy this!

It's also really simple to make -

I hope you enjoy this dish as much as we do ❤️

Let me know how it goes if you try it!

Wishing you a beautiful and delicious weekend!

PS - if you’re looking for a great gift for your partner, your friend, or even yourself for Valentine’s or Galentine’s, consider the gift of red light therapy.

Red light therapy has many uses, but I am personally loving it for my skin and my hair and it’s been incredible for healing from sports injuries for my husband. I’m such a fan of red light therapy, I even made a whole video about it!

I use and recommend the brand Mito. You can get 5% off with my affiliate link.

While that may not sound like a lot, it actually can be really helpful when you invest in a device!

Mito has red lights of all different sizes, even travel size 🙌

Dear Reader, One year ago, I set off on a 30 day experiment with an at-home red light therapy panel to see what would happen. Confession - I am not a naturally organized person. I admire organization. I really do. And I truly love the way it feels when I’m in a very organized and harmonious space. But I’ve come to realize, some people just have a knack for organizing. Like my husband, for example. He doesn’t have much free time, but when he does set his mind to an organizing project, it looks fantastic afterwards 🙌 Me on the other hand? If I try to organize something by myself, there will be lots of time spent...

Dear Reader, Fall is an exciting time of year, isn't it? There's a sense of newness as kids go back to school, the weather gets crisper, and a sense of change is in the air. And while we love the idea of dramatic change, something that I really love about life is the way that just shifting your habits can - over time - create huge shifts in your life. As a health coach, this is one of my favorite things to work on with my clients - small habit shifts that will lead you in the direction of...
