Hi Reader, One day I was flying with another mom. She was great to work with, but she also seemed kind of worn out. She confided in me that she was really stressed (flight attendants actually confide in each other quite a lot, we even call it “jumpseat therapy” 🤣). She felt stressed from juggling all the things - three kids, flying part-time, taking care of a household. During our conversation, I mentioned that I am also a health coach. She let out a big sigh. “I really wish we could eat healthier", she said. “But just cleaning our house takes me so much time that I really don’t have any energy left over to cook and we just end up ordering Uber Eats all the time.” I suggested to her that it might be an idea to instead use the Uber Eats money to pay someone to clean the house and then she could be free to cook healthy meals. Her eyes widened and she smiled. “That’s a great idea!” she said. “I’d much rather cook than clean!” But then a minute later - “But what can I cook that’s healthy?” Even if you don’t have a kid (or three), you might relate to the constant struggle to juggle all the life things with also trying to stay healthy. Well - this is actually one of my superpowers! I’m really, really good at pulling together quick, healthy and delicious meals. Some of the recipes I create myself, some of them I modify from existing recipes (I almost never actually keep a recipe the way it was originally written!)
